A healthy first birthday cake recipe that a toddler loves? Yes, it’s possible. This aromatic pandan custard cake is made with all natural ingredients. It does not contain any artificial food coloring or artificial food flavoring. Furthermore, this easy five steps recipe only takes 15 minutes of preparation work, then another 45 minutes of baking in the oven!

Instead of using heavy cream, we are using coconut milk in this recipe. This cake has the consistency of a clafoutis (soft yet dense) which is easily chewable by a 1 year old! If you are looking to make a smash cake, you can easily make some cream to decorate the pandan cake.

The Perfect Healthy First Birthday Cake Recipe: Pandan Custard Cake Recipe

The key ingredient to this cake is this freshly cut pandan leaves

Serves : 4 – 6 person

Preparation time : 15 mins

Cooking time: 45 mins

Ingredients:

12 fresh pandan leaves, cut and washed

60g butter, melted

200 ml water

200 ml coconut milk

200g plain flour

80g sugar

2 big eggs

Step 1: Extract the flavor from the fresh pandan leaves

Wash and cut the fresh pandan leaves. Then cut them into small pieces. Put them in a blender with 200ml water and blend. Once it’s done, strain the pandan extracts with a sieve. You should get 200 ml of fresh pandan extracts looking like this.

Step 2: Preheat the oven & prepare the baking dish

Preheat the oven at 180°C for 10 minutes. Grease your baking dish with butter.

Step 3: Whisk away

Firstly, beat the eggs and sugar until it’s light and foamy.

Then, add in the fresh pandan extract, melted butter and coconut cream. Whisk and mix it well. You should get a beautiful green mixture like this.

Then, sieve the flour in and continue whisking. Make sure it’s all mixed well.

Step 4: Pour the batter in the dish

Carefully pour the batter into the greased baking dish.

Step 5: Baking time! Sit back and let the oven do its job.

Put the dish into the oven at 180°C and bake it for 45 mins. When the top turns golden brown, it should be done. Insert a toothpick in the middle all the way through the cake, if it comes out clean it’s done! Let it cool down to room temperature. If you like your cake to be more fluffy, eat the cake at room temperature. If you prefer them more dense, chill it in the refrigerator in prior.
